This blend of Kenyan and Ethiopian coffees takes its' name from our affinity for myth and legend and it is a serendipitous success that was first introduced in 2024. Two years later, its remains a popular seasonal offering four our online and cafe customers alike.
While Chimera shines for all brew methods, we find that immersion brewers such as AeroPress, French Press, and Siphon are particularly delicious. For an even more refreshing treat, try Chimera as a cold brew, iced coffee, or iced americano on a hot summer day.
The flavor profile entices the palate with a delicate black tea note that quickly develops into a floral aroma which balances the citric notes of lime.
The logo for this coffee was made from a drawing by our founder and president's daughter, Sophie VanSchyndel. The imaginative and graphic qualities emphasize the unique character of this limited time release.
